Low-Carb Manicotti

Ingredients

  • 15 oz. reduced-fat Ricotta or cottage cheese

  • 1/2 c. shredded Parmesan cheese

  • 1/4 c. shredded Mozzarella cheese (part-skim)

  • 1 tsp. Italian seasoning

  • 1/2 tsp. garlic powder

  • 1/2 tsp. pepper

  • 1/2 tsp. salt

  • 2 Lavish bread sheets (Walmart)

  • 1 jar Yo Mama's Marinara Sauce

  • 1 lb. lean hamburger

Instructions

  1. Preheat oven to 375˚F.

  2. Mix together the cheeses and seasonings.

  3. Cut the two Lavish bread sheets into thirds, so you have 6 smaller sheets.  Spread the cheese mixture over each sheet. Roll each piece up into a roll with the seam down.

  4. Cook meat, drain, and add marinara sauce. Season to taste.

  5. Spray baking dish, and add a little marinara meat sauce to the bottom. Lay your rolls in, and cover with the rest of the sauce.

  6. Bake for 25 minutes. In the last five minutes of baking, sprinkle with your cheese of choice.


Servings: 6


Options: Substitute 98% turkey or chicken for the hamburger.
