Eric's Pie Filling
Ingredients
2 c. milk
1 c. sugar
1/4 c. cornstarch
Cooked pie shell
2 T. melted butter
2 whole eggs
1 tsp. vanilla extract
Whipped topping
Instructions
Mix milk, sugar, cornstarch, butter, eggs, and vanilla in an 8-cup glass measuring cup; whisk together until smooth and no lumps.
Microwave for 5 minutes; remove, and stir with wire whisk.
Place back in the microwave for 2-minute increments until bubbly.
Take out and stir with a wire whisk until smooth.
Place in a cooked pie shell and cover directly with saran wrap.
Place in the refrigerator until completely chilled and top with whipped cream or favorite topping.
NOTE: You can make different flavors; for instance, chocolate: add 1 cup chocolate chips (more if you want it chocolatey) to pudding directly from the microwave, and stir until melted.
