Eric's Pie Filling

Ingredients

  • 2 c. milk

  • 1 c. sugar

  • 1/4 c. cornstarch

  • Cooked pie shell

  • 2 T. melted butter

  • 2 whole eggs

  • 1 tsp. vanilla extract

  • Whipped topping

Instructions

  1. Mix milk, sugar, cornstarch, butter, eggs, and vanilla in an 8-cup glass measuring cup; whisk together until smooth and no lumps.

  2. Microwave for 5 minutes; remove, and stir with wire whisk.

  3. Place back in the microwave for 2-minute increments until bubbly.

  4. Take out and stir with a wire whisk until smooth.

  5. Place in a cooked pie shell and cover directly with saran wrap.

  6. Place in the refrigerator until completely chilled and top with whipped cream or favorite topping.

 

NOTE: You can make different flavors; for instance, chocolate: add 1 cup chocolate chips (more if you want it chocolatey) to pudding directly from the microwave, and stir until melted.
